Recipe: Tofu Peanut Satay

INGREDIENTS:
- 1 block extra or super firm tofu, drained
- 3 tablespoons peanut butter
- ²⁄₃ cup coconut milk
- 2 tablespoons maple syrup
- 1 tablespoon sriracha
- 1 tablespoon sesame oil
- 3 tablespoons soy sauce
- 6 cloves garlic, grated
- 1 tablespoon ginger, grated
- 1 lime, juiced
- 1 handful cilantro, finely chopped
- 2 green onions, thinly sliced
- ¹⁄₂ cup peanuts, crushed
- 1 teaspoon sesame seeds
- 1 tablespoon chili crisp oil
- Steamed rice for serving
INSTRUCTIONS:
- Cube tofu into equal bite-sized pieces and divide them among short skewers on a plate; season with oil, salt, and pepper. Set aside.
- In a large bowl, whisk together the peanut butter, coconut milk, maple syrup, sriracha, sesame oil, soy sauce, large pinch of salt, black pepper to taste, garlic, ginger, & lime juice. Set aside.
- Preheat a large pan over medium-high heat. Add tofu skewers and let cook, 1-2 minutes per side, or until each side is golden brown. Pour half of the peanut sauce over the tofu in the pan. Continue to flip the tofu while the sauce thickens, cooking for another 1-2 minutes each side, or until sauce has thickened and tofu is evenly coated.
- Serve the tofu skewers over rice and drizzle with the rest of the peanut sauce. Garnish with cilantro, green onions, crushed peanuts, sesame seeds, and chili crisp oil.
