Recipe: Loaded Turkey Burger Bowl

INGREDIENTS
- 2 pounds golden potatoes, cubed
- Salt and pepper, to taste
- Spray avocado oil
- 1 pound ground turkey
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper
- 1 teaspoon sea salt
- ½ cup Kewpie mayonnaise
- 1 teaspoon Dijon mustard
- 1 tablespoon ketchup
- ½ teaspoon sweet paprika
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- Up to 1 tablespoon of water
- ½ cup shredded cheddar cheese
- 1 head romaine heart, chopped
- 1 cup chopped tomatoes
- ½ red onion, finely sliced
- ¼ cup chopped dill pickles
INSTRUCTIONS
- Preheat oven or air fryer to 400 degrees F.
- Season potatoes with salt, pepper, and spray liberally with avocado oil.
- Roast in the oven for about 30 minutes, stirring halfway or until tender and golden brown. If using an air fryer, cook for about 20 minutes, shaking halfway.
- Meanwhile, spray a bit more avocado oil in a hot skillet over medium heat. Add ground turkey, onion powder, garlic powder, pepper, and salt, and cook, breaking up into crumbles until browned and cooked through.
- Whisk together the mayo, mustard, ketchup, paprika, onion powder, garlic powder, and add up to one tablespoon of water to reach your desired consistency.
- Build your bowls by layering ¼ of the potatoes into four bowls and topping each with one tablespoon of shredded cheese.
- Divide the ground turkey into portions and divide the remaining cheese into portions.
- Layer with romaine, tomatoes, and onions.
- Drizzle with the burger sauce and sprinkle with chopped pickles.
