Recipe: Greek Grilled Halloumi Sandwich

INGREDIENTS
- 1 (8 oz) block halloumi
- 1 heirloom tomato
- 4 slices sourdough or whole-grain bread
- ¼ cup mayonnaise
- ¼ lemon, juiced
- ¼ teaspoon garlic powder
- 1 tablespoon finely chopped basil
- 1 tablespoon avocado oil
- 2 handfuls of baby arugula
- Pickled red onions
INSTRUCTIONS
- Slice the halloumi into ½ inch thick slabs.
- Slice the tomato into ½ inch thick slices.
- Toast the bread and set it aside.
- Whisk together mayonnaise, lemon juice, garlic powder, and basil and set aside.
- Heat avocado oil in a large skillet over medium-high heat, and grill the halloumi on both sides until golden brown – about 2-3 minutes.
- Spread garlic herb mayonnaise on each slice of toast. Layer half of the bread with halloumi, tomato, arugula, and pickled onions, and top with the remaining toast.
