Recipe: Greek Grilled Halloumi Sandwich

Greek Grilled Halloumi Sandwich

INGREDIENTS

  • 1 (8 oz) block halloumi
  • 1 heirloom tomato
  • 4 slices sourdough or whole-grain bread
  • ¼ cup mayonnaise
  • ¼ lemon, juiced
  • ¼ teaspoon garlic powder
  • 1 tablespoon finely chopped basil
  • 1 tablespoon avocado oil
  • 2 handfuls of baby arugula
  • Pickled red onions

INSTRUCTIONS

  1. Slice the halloumi into ½ inch thick slabs.
  2. Slice the tomato into ½ inch thick slices.
  3. Toast the bread and set it aside.
  4. Whisk together mayonnaise, lemon juice, garlic powder, and basil and set aside.
  5. Heat avocado oil in a large skillet over medium-high heat, and grill the halloumi on both sides until golden brown – about 2-3 minutes.
  6. Spread garlic herb mayonnaise on each slice of toast. Layer half of the bread with halloumi, tomato, arugula, and pickled onions, and top with the remaining toast.
