Recipe: Thai Basil Stir Fry

INGREDIENTS
- 1 tablespoon tamari or soy sauce
- 1 tablespoon toasted sesame oil
- 1 tablespoon fish sauce
- 1 tablespoon maple syrup
- ⅓ cup water
- 2 tablespoons cornstarch
- ½ teaspoon chicken bouillon
- 7 ounces vermicelli rice noodles
- 1 avocado olive oil
- 2 green onions, chopped
- 3 cloves garlic, grated
- 1 tablespoon grated ginger
- 1 pound ground chicken
- 1 bunch broccolini, cut into bite-sized pieces
- 1 bunch Thai basil leaves, chopped
- 1 lime, cut into wedges
INSTRUCTIONS
- Combine tamari, sesame oil, fish sauce, maple syrup, water, and corn starch and set aside.
- Prepare noodles according to package instructions. Drain and rinse well with cold water.
- Heat avocado oil over medium-high heat. Add green onions, garlic, and ginger. Stir fry for one minute.
- Add chicken and break up with a spatula until it’s well broken into crumbles and beginning to brown.
- Add broccolini and sauce and cook, stirring constantly for 3-5 minutes or until the broccolini is crisp-tender.
- Add basil leaves and toss to incorporate.
- Serve over rice noodles with lime wedges and your favorite hot sauce.
