Recipe: Thai Basil Stir Fry

Thai Basil Chicken Stir Fry

INGREDIENTS

  • 1 tablespoon tamari or soy sauce
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon fish sauce
  • 1 tablespoon maple syrup
  • ⅓ cup water
  • 2 tablespoons cornstarch
  • ½ teaspoon chicken bouillon
  • 7 ounces vermicelli rice noodles
  • 1 avocado olive oil
  • 2 green onions, chopped
  • 3 cloves garlic, grated
  • 1 tablespoon grated ginger
  • 1 pound ground chicken
  • 1 bunch broccolini, cut into bite-sized pieces
  • 1 bunch Thai basil leaves, chopped
  • 1 lime, cut into wedges

INSTRUCTIONS

  1. Combine tamari, sesame oil, fish sauce, maple syrup, water, and corn starch and set aside.
  2. Prepare noodles according to package instructions. Drain and rinse well with cold water.
  3. Heat avocado oil over medium-high heat. Add green onions, garlic, and ginger. Stir fry for one minute.
  4. Add chicken and break up with a spatula until it’s well broken into crumbles and beginning to brown.
  5. Add broccolini and sauce and cook, stirring constantly for 3-5 minutes or until the broccolini is crisp-tender.
  6. Add basil leaves and toss to incorporate.
  7. Serve over rice noodles with lime wedges and your favorite hot sauce.
