Recipe: Greek Grilled Halloumi Sandwich

Greek Grilled Halloumi Sandwich

INGREDIENTS

  • 1 (8 oz) block halloumi
  • 1 heirloom tomato 
  • 4 slices sourdough or whole grain bread 
  • ¼ cup mayonnaise
  • ¼ lemon, juiced 
  • ¼ teaspoon garlic powder 
  • 1 tablespoon finely chopped basil 
  • 1 tablespoon avocado oil
  • 2 handfuls baby arugula 
  • Pickled red onions 

INSTRUCTIONS 

  1. Slice the halloumi into ½" thick slabs. 
  2. Slice the tomato into ½" thick slices. 
  3. Toast the bread and set aside. 
  4. Whisk together mayonnaise, lemon juice, garlic powder, and basil and set aside. 
  5. Heat avocado oil in a large skillet over medium high heat and grill the halloumi on both sides until golden brown — about 2-3 minutes. 
  6. Spread garlic herb mayonnaise on each slice of toast and layer half of the bread with halloumi, tomato, arugula and pickled onions and top with the remaining toast.
