Recipe: Cilantro Lime Tofu Burrito Bowl

INGREDIENTS
- 1 block of extra-firm or super-firm tofu, pressed as needed*
- 1 tablespoon olive oil
- ¼ cup lime juice
- 3 garlic cloves, finely minced
- 3 tablespoons fresh cilantro, finely chopped
- 1 tablespoon fine sea salt
- ½ teaspoon ground black pepper
- 1 teaspoon smoked paprika
- 1 tablespoon maple syrup
INSTRUCTIONS
- Bring a pot of salted water to a boil.
- Cut the tofu into bite sized chunks and add to water ad boil for 5-10 minutes.
- Drain well and cool slightly.
- Meanwhile, combine remaining ingredients in a medium bowl and set aside.
- Add in the tofu and toss to combine.
- Let marinate for 30 minutes (or overnight).
- Heat air fryer to 400 degrees F (or heat a large skillet over medium heat).
- Air fry or sauté until golden with crispy edges — about 10-15 minutes (shaking half-way if air frying).
- Build your burrito bowl using the ingredients below.
BURRITO BOWL INGREDIENTS
- Steamed rice
- 1 can (15 oz) black beans, drained
- 1 avocado, sliced
- 1 cup Pico de Gallo
- ¼ cup chopped cilantro
