Recipe: Cilantro Lime Tofu Burrito Bowl

Cilantro Lime Tofu Burrito Bowl

INGREDIENTS

  • 1 block of extra-firm or super-firm tofu, pressed as needed* 
  • 1 tablespoon olive oil 
  • ¼ cup lime juice
  • 3 garlic cloves, finely minced 
  • 3 tablespoons fresh cilantro, finely chopped 
  • 1 tablespoon fine sea salt 
  • ½ teaspoon ground black pepper
  • 1 teaspoon smoked paprika 
  • 1 tablespoon maple syrup 

INSTRUCTIONS 

  1. Bring a pot of salted water to a boil.
  2. Cut the tofu into bite sized chunks and add to water ad boil for 5-10 minutes. 
  3. Drain well and cool slightly. 
  4. Meanwhile, combine remaining ingredients in a medium bowl and set aside. 
  5. Add in the tofu and toss to combine. 
  6. Let marinate for 30 minutes (or overnight). 
  7. Heat air fryer to 400 degrees F (or heat a large skillet over medium heat). 
  8. Air fry or sauté until golden with crispy edges — about 10-15 minutes (shaking half-way if air frying). 
  9. Build your burrito bowl using the ingredients below. 

BURRITO BOWL INGREDIENTS 

  • Steamed rice 
  • 1 can (15 oz) black beans, drained 
  • 1 avocado, sliced 
  • 1 cup Pico de Gallo 
  • ¼ cup chopped cilantro
