Recipe: Air Fryer Fish Tacos

INGREDIENTS
- 1 lb cod, cut into 4-inch pieces
- 3 tablespoons taco seasoning*
- 1 tablespoon avocado oil
- 2 cups shredded cabbage
- 8 tortillas of choice
- 2 avocados, diced
- 2 limes, cut into wedges
- Pink pickled onions
- Hot sauce of choice
- ¼ cup of Lemon Feta sauce**
INSTRUCTIONS
- Preheat air fryer (or oven) to 400 degrees F.
- In a large bowl, toss the fish with taco seasoning and oil until the fish is fully coated in seasoning.
- Add fish in preheated air fryer tray or basket and cook at 400 degrees for about 8 minutes, flipping halfway through, until fully cooked. OR place on a parchment lined baking sheet and bake for 12-15 minutes or until fish flakes easily with a fork.
- Assemble your tacos by adding pieces of fish to each tortilla then topping with the cabbage, avocado, pickled onions, hot sauce and a drizzle of the lemon feta sauce.
*Homemade Taco Seasoning Blend
- 2 tablespoons chili powder
- 4 tablespoons cumin
- 2 teaspoons coriander
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon oregano
- 1 teaspoon smoked paprika
- 2 teaspoons salt
- ½ teaspoon black pepper
- ¼ teaspoon chipotle chili powder
*Lemon Feta Sauce
- ⅔ cup milk of choice
- 2 teaspoons apple cider vinegar
- ½ lemon, zested and juiced
- 1 clove garlic, grated
- ½ cup feta cheese, finely crumbled
- 2 tablespoons, chopped chives
- 2 tablespoons finely chopped parsley
- Salt and pepper, to taste
Mix milk and vinegar in a bowl and allow to sit for 10 minutes before adding the remaining.
