Recipe: Air Fryer Fish Tacos

Air Fryer Fish Tacos

INGREDIENTS

  • 1 lb cod, cut into 4-inch pieces
  • 3 tablespoons taco seasoning*
  • 1 tablespoon avocado oil
  • 2 cups shredded cabbage 
  • 8 tortillas of choice 
  • 2 avocados, diced
  • 2 limes, cut into wedges 
  • Pink pickled onions 
  • Hot sauce of choice 
  • ¼ cup of Lemon Feta sauce** 

INSTRUCTIONS

  1. Preheat air fryer (or oven) to 400 degrees F.
  2. In a large bowl, toss the fish with taco seasoning and oil until the fish is fully coated in seasoning. 
  3. Add fish in preheated air fryer tray or basket and cook at 400 degrees for about 8 minutes, flipping halfway through, until fully cooked. OR place on a parchment lined baking sheet and bake for 12-15 minutes or until fish flakes easily with a fork. 
  4. Assemble your tacos by adding pieces of fish to each tortilla then topping with the cabbage, avocado, pickled onions, hot sauce and a drizzle of the lemon feta sauce. 

*Homemade Taco Seasoning Blend

  • 2 tablespoons chili powder
  • 4 tablespoons cumin
  • 2 teaspoons coriander 
  • 1 teaspoon onion powder 
  • 1 teaspoon garlic powder 
  • 1 teaspoon oregano 
  • 1 teaspoon smoked paprika 
  • 2 teaspoons salt 
  • ½ teaspoon black pepper
  • ¼ teaspoon chipotle chili powder

*Lemon Feta Sauce

  • ⅔ cup milk of choice 
  • 2 teaspoons apple cider vinegar 
  • ½ lemon, zested and juiced 
  • 1 clove garlic, grated 
  • ½ cup feta cheese, finely crumbled 
  • 2 tablespoons, chopped chives 
  • 2 tablespoons finely chopped parsley 
  • Salt and pepper, to taste 

Mix milk and vinegar in a bowl and allow to sit for 10 minutes before adding the remaining.
