Recipe: Saucy Roasted Salmon with Avocado Salsa

Saucy salmon with avocado salsa on a plate of rice

INGREDIENTS: 

  • 1 teaspoon sea salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder 
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon black pepper
  • 1 ½ lbs salmon fillet 
  • ¼ cup mayonnaise 
  • 2 tablespoons sweet chili sauce 
  • 1 clove garlic, grated 
  • 1 teaspoon soy sauce
  • 1 avocado, diced
  • ½ English cucumber, diced 
  • ¼ cup cilantro, chopped
  • ½ lime, juiced 
  • 1 teaspoon honey 
  • Cooked rice, for serving 

INSTRUCTIONS: 

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper. 
  2. In a small bowl, mix together the salt, spices, and pepper. Cut the salmon into four portions, pat dry, and coat evenly with the spice mixture. Place the salmon on the prepared baking sheet. 
  3. In another bowl, combine the mayo, sweet chili sauce, garlic, and soy sauce. Set aside half of the sauce for serving.
  4. Spread a spoonful of sauce on each piece of salmon (be careful not to cross-contaminate with the raw salmon!) 
  5. Bake for 10-13 minutes, then broil for the last few minutes to lightly caramelize the top. 
  6. While the salmon bakes, make the salsa by tossing the avocado, cucumber, cilantro, lime, honey, and a pinch of salt and pepper. 
  7. Serve the salmon over rice, top with avocado salad, and the reserved sauce.
