Recipe: Quinoa Tabbouleh

INGREDIENTS

  • 1 cup quinoa, cooked
  • 1 cup finely chopped parsley
  • ½ cup finely chopped arugula
  • 1 red onion, minced
  • 1 roma tomato, chopped
  • 1 lemon, juiced and zested
  • 1 tablespoon olive oil
  • Salt and Pepper, to taste

INSTRUCTIONS

  1. Toss all ingredients together and taste. Add salt and pepper as needed.

Serves: 4
