Recipe: Italian Grinder Salad

Italian Grinder Salad

INGREDIENTS

  • 6 oz whole wheat or protein spiral pasta
  • 1 cup cucumber, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup kale, finely chopped
  • ½ cup red onion, thinly sliced
  • ½ cup pepperoncini, chopped
  • 3 oz deli turkey, chopped
  • 3 oz salami, chopped
  • 3 oz turkey pepperoni, chopped
  • 1 can cannellini beans, drained and rinsed
  • ¼ cup mozzarella cheese, shredded
  • ½ cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon red wine vinegar
  • ¼ cup parmesan cheese, grated
  • 1 ½ teaspoon honey
  • 1 teaspoon dried oregano
  • ½ teaspoon garlic powder
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste

 

INSTRUCTIONS

  1. Cook pasta according to package instructions and rinse under cold water until cool.
  2. In a large mixing bowl, add cucumber, tomato, kale, onion, pepperoncini, turkey, salami, pepperoni, beans, and mozzarella cheese.
  3. In a small bowl, whisk together yogurt, mayonnaise, vinegar, parmesan, honey, oregano, garlic powder, Dijon mustard, and season to taste with salt and pepper.
  4. Pour dressing over salad and toss until everything is evenly coated.
