Recipe: Italian Grinder Salad

INGREDIENTS
- 6 oz whole wheat or protein spiral pasta
- 1 cup cucumber, chopped
- 1 cup cherry tomatoes, halved
- 1 cup kale, finely chopped
- ½ cup red onion, thinly sliced
- ½ cup pepperoncini, chopped
- 3 oz deli turkey, chopped
- 3 oz salami, chopped
- 3 oz turkey pepperoni, chopped
- 1 can cannellini beans, drained and rinsed
- ¼ cup mozzarella cheese, shredded
- ½ cup plain Greek yogurt
- 2 tablespoons mayonnaise
- 1 tablespoon red wine vinegar
- ¼ cup parmesan cheese, grated
- 1 ½ teaspoon honey
- 1 teaspoon dried oregano
- ½ teaspoon garlic powder
- 1 teaspoon Dijon mustard
- Salt and pepper, to taste
INSTRUCTIONS
- Cook pasta according to package instructions and rinse under cold water until cool.
- In a large mixing bowl, add cucumber, tomato, kale, onion, pepperoncini, turkey, salami, pepperoni, beans, and mozzarella cheese.
- In a small bowl, whisk together yogurt, mayonnaise, vinegar, parmesan, honey, oregano, garlic powder, Dijon mustard, and season to taste with salt and pepper.
- Pour dressing over salad and toss until everything is evenly coated.
