Recipe: Creamy Tofu Scramble

INGREDIENTS
- 1 (14 oz) block super firm tofu
- 1 tablespoon olive oil or vegan butter
- 1 (10 oz) block silken tofu
- ½ cup plant-based milk of choice
- ⅓ cup water
- 2 tablespoons nutritional yeast
- 3 teaspoons corn starch
- ¼ teaspoon ground turmeric
- 1 teaspoon Dijon mustard
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon black salt (kala namak) optional
- ½ teaspoon sweet paprika
- Salt and pepper, to taste
INSTRUCTIONS
- Using a mandolin or vegetable peeler, slice the super firm tofu into sheets.
- Heat oil over medium heat in a large skillet and add tofu sheets, stirring occasionally.
- Meanwhile, in your blender, add the remaining ingredients and blend until smooth.
- Pour the blended mixture over the tofu sheets and stir to coat them thoroughly with the creamy sauce.
- Cook for a few minutes until the sauce has thickened and you have a mixture resembling creamy scrambled eggs.
- Taste and add additional salt and pepper if needed.
