Creamy Tofu Scramble

INGREDIENTS

  • 1 (14 oz) block super firm tofu
  • 1 tablespoon olive oil or vegan butter
  • 1 (10 oz) block silken tofu
  • ½ cup plant-based milk of choice
  • ⅓ cup water
  • 2 tablespoons nutritional yeast
  • 3 teaspoons corn starch
  • ¼ teaspoon ground turmeric
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black salt (kala namak) optional
  • ½ teaspoon sweet paprika
  • Salt and pepper, to taste
     

INSTRUCTIONS

  1. Using a mandolin or vegetable peeler, slice the super firm tofu into sheets.
  2. Heat oil over medium heat in a large skillet and add tofu sheets, stirring occasionally.
  3. Meanwhile, in your blender, add the remaining ingredients and blend until smooth.
  4. Pour the blended mixture over the tofu sheets and stir to coat them thoroughly with the creamy sauce.
  5. Cook for a few minutes until the sauce has thickened and you have a mixture resembling creamy scrambled eggs.
  6. Taste and add additional salt and pepper if needed.
