Recipe: Cilantro Grilled Chicken and Mango Salad

  • 3 tablespoons olive oil
  • 3 limes, juiced
  • ½ cup fresh chopped cilantro
  • 4 cloves garlic, minced
  • 2 teaspoons honey
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste
  • Avocado spray oil
  • 4 thin, sliced boneless skinless chicken breasts
  • 5 cups chopped Romaine lettuce
  • 1 red pepper, thinly sliced
  • ½ English cucumber, chopped
  • 1 large mango, diced
  • 1 avocado, cubed
  • 1 green onion, chopped


  1. Whisk oil, zest of one lime and juice of three limes juice, cilantro, garlic, honey, cumin, salt and pepper. Place chicken in a dish and cover with 1/3 of the dressing and marinate for at least 30 minutes or up to two hours. Reserve the rest of the dressing separately for later.
  2. Spray avocado oil in a grill pan or skillet over medium-high heat and grill chicken until browned and cooked through (about 2-4 minutes per side) and set aside to rest before slicing into strips.
  3. In a medium bowl, combine the mango, avocado and green onion and gently toss with two tablespoons of the reserved dressing and set aside.
  4. In a large bowl, add the romaine lettuce, bell peppers, and cucumber and toss with additional dressing. Top with sliced chicken and avocado and mango salsa.
