INGREDIENTS
- 1 tablespoon avocado oil
- 1 lb char siu* (Chinese BBQ Pork), diced
- 1 small onion, finely diced
- 3 cloves garlic, finely diced
- 1 inch piece of ginger, finely minced
- 1 cup cooked brown rice
- 3 tablespoons tamari or soy sauce
- 2 tablespoons oyster sauce
- 1 teaspoon sesame oil
- Salt and white pepper, to taste
- 2 eggs, lightly beaten
- 3 stalks green onion
INSTRUCTIONS
- Heat a large wok or pan over medium-high heat. Add oil and the char siu, cooking until heated through.
- Add the onions and cook for 3-5 minutes, or until translucent. Stir in the garlic and ginger, and cook for about 2 minutes, until fragrant.
- Add the rice and toss to combine. Pour in the tamari, oyster sauce, and sesame oil, and continue tossing until everything is evenly coated. Season with salt and pepper to taste.
- Push the rice mixture to one side of the pan. Add the eggs to the empty side, season with a pinch of salt, and cook until just set but still slightly glossy.
- Add the green onions, then stir everything together until well combined.
