Recipe: Sheet Pan Chicken Kofta Kebabs

INGREDIENTS
- 2 lbs ground chicken
- ½ red onion, minced
- 7 cloves garlic, minced
- 1 cup parsley, chopped
- 2 tablespoons tomato paste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon cumin
- Pinch of cinnamon
- ½ teaspoon oregano
- 2 teaspoons salt
- 1 teaspoon pepper
- Olive oil
- 1 cup cherry tomatoes
- 1 English cucumber, diced
- ½ red onion, thinly sliced into half moons
- ½ cup chopped parsley
- 1 lemon, juiced
- Kalamata olive, for serving
INSTRUCTIONS
- Preheat oven to 450°F.
- In a large bowl, mix all ingredients with olive oil until well combined.
- Lightly oil a sheet tray. Press the meat mixture into a square shape on the tray, about ½ inch thick.
- Use a straight-edge utensil or knife to cut the mixture into strips and gently separate before baking.
- Bake for 10-12 minutes, then broil for 2-5 minutes to get a nice golden color.
- While baking, make a simple salad with cherry tomatoes, cucumber, sliced onion, parsley, and lemon juice.
- Plate salad, topped with kebabs and a few olives.
