Recipe: Sheet Pan Chicken Kofta Kebabs

Sheet Pan Kofta Kebabs

INGREDIENTS

  • 2 lbs ground chicken
  • ½ red onion, minced
  • 7 cloves garlic, minced
  • 1 cup parsley, chopped
  • 2 tablespoons tomato paste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Pinch of cinnamon
  • ½ teaspoon oregano
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • Olive oil
  • 1 cup cherry tomatoes
  • 1 English cucumber, diced
  • ½ red onion, thinly sliced into half moons
  • ½ cup chopped parsley
  • 1 lemon, juiced
  • Kalamata olive, for serving

INSTRUCTIONS

  1. Preheat oven to 450°F.
  2. In a large bowl, mix all ingredients with olive oil until well combined.
  3. Lightly oil a sheet tray. Press the meat mixture into a square shape on the tray, about ½ inch thick.
  4. Use a straight-edge utensil or knife to cut the mixture into strips and gently separate before baking.
  5. Bake for 10-12 minutes, then broil for 2-5 minutes to get a nice golden color.
  6. While baking, make a simple salad with cherry tomatoes, cucumber, sliced onion, parsley, and lemon juice.
  7. Plate salad, topped with kebabs and a few olives.
