Recipe: Sesame Ginger Flank Steak with Miso Slaw

INGREDIENTS
- 2 pounds flank steak
- ½ cup soy sauce
- ¼ cup mirin
- 6 cloves garlic, minced
- 2 tablespoons minced ginger
- 1 teaspoon crushed red pepper flakes
- 1 tablespoon sesame oil
- 1 lime, zested and juiced
- 2 green onions finely chopped
- 1 tablespoon sesame seeds
- 2 cups green cabbage, finely shredded
- 2 cups red cabbage, finely shredded
- 1 carrot, peeled & julienned
- ½ cup chopped green onions
- 1 tablespoon black sesame seeds
- 1 inch fresh ginger, finely grated
- 1 clove garlic, finely grated
- 2 tablespoons mellow miso
- 2 tablespoons rice vinegar
- 1 tablespoon tamari soy sauce
- 2 teaspoons toasted sesame oil
- 3 tablespoons water
INSTRUCTIONS
- Combine soy sauce, mirin, garlic, ginger, crushed red pepper flakes, sesame oil and lime. Pour over steak and marinate for 3-4 hours.
- Remove the steak from the marinade and pat dry.
- Heat grill or grill pan to high, brush grill grates with cooking oil, then place the steak on the grill. Cook for 3 minutes before rotating 90 degrees then cook an additional 3 minutes. Flip and repeat.
- Remove the steak and allow to rest for 5-10 minutes.
- Slice against the grain and garnish with the green onion and sesame seeds.
- In a large bowl, toss green and red cabbage with carrots and green onions and set aside.
- In a medium bowl, whisk together sesame seeds, ginger, garlic, miso, vinegar, tamari, sesame oil, and water until emulsified.
- Pour dressing over the vegetables and toss well.
- Serve as a side dish or as a bed underneath the flank steak.
