Recipe: Gochujang Chicken Burgers

Gochujang Chicken Burgers

INGREDIENTS

  • 1 lb. ground chicken 
  • 1 egg, whisked 
  • ½ cup panko breadcrumbs 
  • 1 tablespoon gochujang paste 
  • ½ teaspoon garlic powder 
  • ½ teaspoon onion powder 
  • 1 teaspoon sea salt 
  • ½ teaspoon ground black pepper
  • 1 tablespoon avocado oil 
  • 4 slices cheddar or gouda cheese (optional) 
  • 4 whole wheat hamburger buns
  • 1½ cups kimchi, chopped 
  • ½ cup cilantro leaves 
  • ¼ English cucumber, thinly sliced 

 

INSTRUCTIONS 

  1. In a large mixing bowl, combine the ground chicken, ½ cup panko breadcrumbs, gochujang, garlic powder, onion powder, salt, and pepper. Mix until evenly incorporated. 
  2. Divide into four equal pieces, roll into large balls, and press or shape into patties. 
  3. Heat avocado oil over medium-high heat in a skillet or grill. 
  4. Cook for 4-5 minutes until browned, then flip, add cheese (if using), and cook until 165 degrees internally and browned on the other side. 
  5. Toast buns and top the bottom bun with the patty. Top with kimchi, cilantro, and cucumber slices.
