Recipe: Apple Cinnamon Breakfast Crumble

Apple cinnamon breakfast crumble

INGREDIENTS

  • 1 tablespoon coconut oil
  • 6 honey crisp apples, chopped
  • 1 tablespoon ground cinnamon
  •  ¼ teaspoon salt
  • 2/3 cups old-fashioned oats
  • 2/3 cups pecans
  • 1 tablespoon coconut oil
  • 2 teaspoons maple syrup
     

INSTRUCTIONS

  1. Preheat oven to 350 degrees F.
  2. Heat 1 tablespoon coconut oil in a skillet over medium high heat and add apples, cinnamon, and salt.
  3. Stir until well combined and then cover with a lid allowing apples to soften for a few minutes.
  4. Add oats, pecans, remaining coconut oil, and maple syrup in a food processor and pulse until you get a crumbly mixture – adding up to 1 tablespoon of water if your mixture seems dry.
  5. Grease a baking dish with coconut oil and spread the apple mixture into an even layer.
  6. Use your hands to squeeze the topping into larger crumbles and sprinkle on top of the apples.
  7. Bake for 15-20 minutes or until golden brown.
  8. Serve as is or with a splash of milk of your choice or vanilla Greek yogurt.
